Native yeast strains cultivated for brewery applications are rigorously tested through seven layers of quality control, until finally selected for 1 gallon batches to sample for esters and aroma, flavor and characteristics. This is how we ensure reproducible quality and unmatched reliability. We currently offer 1 through 120 bbl system commercial pitches of both our native and classic strains.
